Ceylon Cinnamon Liqueur

For those playing along at home, you'll need a Ceylon cinnamon liqueur for a future cocktail. There's lots of widely available liqueurs made with other varieties of cinnamon, but those won't do. If you aren't familiar with Ceylon cinnamon, this liqueur nicely showcases the complex and subtle flavor of it.

Ingredients:
3/4 of a bottle of vodka. You don't need anything fancy, but something with a mild flavor is better.
8-10 sticks of Ceylon cinnamon.
1.5 cup sugar
1 cup water

You'll also want a funnel and a sieve.

Infuse the cinnamon into the vodka 12-18 hours, shaking it occasionally.
Remove the cinnamon, strain the infusion.
Make a simple syrup with the sugar and water. (Heating is not necessary for that concentration syrup)
Pour the infusion back into the bottle, and fill it the rest of the way with the sugar syrup. You'll have a little left over. Sorry!
