So in honor of my roommate and I graduating from college, I made cherry cordial cupcakes with rum icing last night. They're basically chocolate cupcakes layered with cream cheese/cherry concoction and cherry pie filling.
To prevent the jam or filling from bubbling, you have to fill them after the cupcakes have baked. I've seen people scoop out the center of the cupcakes with a gadget that removes apple cores. Or you can use a small knife and remove the top of the cupcake. I don't know if piping will work since the fruit might get stuck in the tip.
I have nothing useful to suggest regarding your question, but wanted to say I especially like the last photo you posted, sorry if thats a bit OT, I just think the composition n stuff is good
