I am going to attempt to make Vegan Lychee Cupcakes for my boyfriend's 28th birthday on Friday. I never used this recipe before but I got the Vegan Cupcakes Take over the World book for last year Christmas present. I am not vegan but I steer away from dairy products.
My question is what would be a good icing recipe to go with this lychee flavor? I was thinking of using coconut milk in the icing. Any suggestions?
