5 lbs cleaned pork shoulder (keep the fat, toss the silverskin. i started out with 6.5 lbs of untrimmed meat, and was really ocd about getting all the connective tissue.)
1.5 oz nice salt
1 tsp ground cloves (i'm guessing; i didn't really measure)
2 big ripe bananas
