I mentioned this recipe to bookelfe, and figured I should post it here. It is quick, easy, and pretty much vegan. (Might take a look at the ingredients for the bbq sauce, though!)

1 can black beans, drained
1 can white beans, drained
1 can kernal corn, drained
1 small can diced green chilies, drained
1 can diced tomatoes, NOT drained
1/3 cup your fave bbq sauce. Whatever you have in the fridge, really
1/2 tsp garlic salt, or to taste
1 tsp ground cumin

Dump all in a pot, and at the very least, heat through. This would prolly be good with sausage, or cooked chicken, if you want to add meat to it. Serve over cornbread, rice, or eat plain. Sprinkle minced chives or cilantro, shredded cheese or put on a dollop of sour cream. Or not. Its rather flexible, and the core ingredients are very easy to stick in a cupboard for when you have need of something quick and easy.
