Vegetable Casserole

2 Cans Mixed Vegetables, drained
1 Sm. Chopped Onion
8 oz. Sour Cream
1 Can Cream of Chicken Soup
1 Cup Shredded Cheese
1/2 Cup Chopped Bell Pepper
1 Stack Ritz Crackers
1 Stick of Butter, melted

Mix vegetables, onion, sour cream, soup, cheese and bell pepper together. Place in greased casserole dish. Break crackers into crumbs and mix with the melted butter. Pour over mixture. Bake at 350 degrees for 30 to 45 minutes.
