I had to call the plumber and get them to snake out the line... since they couldn't find the cleanout at the house we had to have them tear the toilet off of the moorings and throw it into the shower temporarily. Then I had to run out and buy a Shop-Vac and try to suck the sewage up and dump it down the sewer manhole in the middle of the street. Also not fun.
Hopefully her insurance will cover it so you don't have to get into litigation-- otherwise you'll have to have your insurance cover it and take her to court to pay the deductible. I can tell you from my own experience that the sheetrock will most likely have to be ripped out, in my case they had to tear out every bit of sheetrock that the sewage touched, even if it went up only an inch from the floor. And if it got in the walls, they'll have to be ripped out and repainted.
I can also highly recommend ServiceMaster for doing the work, they did a great job-- you would never know looking at the downstairs area where we've had lots of parties since that it was ankle-high in sewage. Had to get the carpet totally replaced, but that let me put in the carpet I wanted. So the whole thing sucked, but I made it through OK. (After paying a $1000 deductible, which was annoying, though).

Her plumber also says, by that logic that the water was clean because it came from the faucet. The coloration I was seeing in the water is sediment and contaminants from the stuff between the floor and wallboard on the ceiling. Which is why it was all coming out yellow and brown instead of black like one would assume dirty water from stuff like that would come out. She commented "wow, that dried up nicely and didn't even leave any stains." If I hadn't taken those pictures I'm sure they would've said it wasn't even all that bad.
She's already talking about getting blow dryers in there to save the carpet...
There is no insurance involved for me in this matter because this is all her property that's damaged, not mine. This isn't a full blown disaster for her yet, but it will be if she keeps skirting the issue like she intends to.
