I had an unexpected day off today. Unexpected because I made to put in for it six months ago and promptly forgot all about it. I wasted most of it attempting to bake rum cake doughnuts. We have a set of pans for baking doughnuts in the oven and two weeks ago I suddenly got a hare for rum cake, so there you go.
This was the the only recipe I could find that sounded like what I wanted. I halved it in case of Epic Fail!™ and followed it to the letter.
The result: My doughnuts turned out more like pancakes. That is, very flat. o_0; The
pumpkin and leaf cupcakes turned out better, but they were lopsided due to deflation. I blamed
the altitude and resolved to try again.
For the second batch, I omitted the pudding and followed the high-altitude directions. After four minutes in the mixer the batter was like marshmallow cream and the resulting pastries, while loftier, mostly tore up as I was getting them out of the pans. I glazed it all anyway and they taste good. They just are not at all pretty, hence the lack of photos.
I guess I just can't bake. :)
The only thing I nailed was the rum glaze. Brown sugar, butter and rum. Oh, yeah! I should just skip the cake and admit what it is I really want to consume!
I also think I may chuck the pumpkin and leaf pan. It's cute, but it sucks. Non-stick me arse! I lost at least a third of each muffin due to sticking and one pan had to be tossed because there were holes in it when I was done getting the cakes out!
