Alright... this is a long overdue post. Sorry you guys.. i was struggling in the evil clutches of school work for the past 3 weeks and later obsessed with whining and worrying about my awful grades. A great BIG THANK YOU to all who came down to the bazaar - yes 2 horrifying days of baking, and then suffering in the heat, battling with flies and flying papers (never again i swear...). Thank you all for supporting me!
And now, because I am pressed for time, I'm juggling with the mixer in one hand and this keyboard in the other, egg yolk splashing all over the place, much to the chagrin of my poor Mac, which will most definitely be blackened after this experience.
In preparation for the bazaar, I hauled out my lovely waffle maker early last sunday morning. (present from all you wonderful tsd ppl out there) To tell you the truth, I haven't had the time to use it in the past year. I used a fantastic recipe, from all recipes.com, which i had been eyeing for quite some time. Nothing beats having piping hot crisp waffles with yoghurt, berries, nutella and peanut butter on a glorious sunday morning. I hope I managed to make my neighbours jealous with the sweet scent of syrup and toasty waffles. Just this once. It's kinda like my secret ploy to get back at them for the tempting breakfast smells coming in through my bathroom window at 7am in the morning.
So here's the recipe, and you'll be the envy of all your neighbours.
Ingredients:
2 eggs
2 cups all-purpose flour (you can use whole wheat too)
1 3/4 cups milk
1/2 cup vegetable oil (i used olive)
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
Steps:
1) Preheat waffle iron. Separate egg yolks from egg whites. Beat egg yolks together with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.
2) Beat egg whites until still. Fold the stiff egg whites into mixture.
3) Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.
Have fun playing with the waffle iron! It's the best part. You pop the mixture in and within a few minutes, a waffle is magically created. Serve it with icecream, maple syrup, butter, caramel sauce, nutella, peanut butter... basically anything you want!
