Potato, Cheese & Leek Pastie

Oct 13, 2013 11:02

Boiled far too many potatoes and ended up with more leftovers than I had anticipated. So I made some potato, cheese & leek pasties :)
Really easy to make and so tasty it barely lasted 10 mins out of the oven!

As this is a left over recipe I can't really give exact amounts. Everything is approx. The cheese I used was a wee block of cheddar, which was left over from a previous recipe. The leek was also left over from another recipe. Amazing what you can make out of random bits and bobs lying about the fridge!

Ingredients:
  • Leftover boiled potatoes
  • Grated cheddar cheese
  • 1 baby leek sliced
  • 1 tbp butter
  • Salt & Pepper
  • Ready rolled puff pastry cut into rectangles
Method:
  1. Roughly mash potatoes
  2. Heat butter in pan.
  3. Add sliced leek and saute.
  4. Add potatoes and heat through.
  5. Turn heat off and add grated cheese. Mix well.
  6. Season with salt and pepper. Leave to cool.
  7. Cut the rolled puff pastry sheet into 8 rectangles.
  8. Put a generous amount of potato filling in the middle of one of the rectangles.
  9. Cover with another puff pastry rectangle.
  10. Seal the edges of the pastry with a fork.
  11. Repeat until all the filling has been used up (or you run out of pastry!)
  12. OPT: At this stage you can egg wash the pasties
  13. Put the pasties on a lined baking tray and bake in a 180C preheated oven for 30-40 mins.
  14. Leave to cool slightly before devouring.
