Boiled far too many potatoes and ended up with more leftovers than I had anticipated. So I made some potato, cheese & leek pasties :)
Really easy to make and so tasty it barely lasted 10 mins out of the oven!
As this is a left over recipe I can't really give exact amounts. Everything is approx. The cheese I used was a wee block of cheddar, which was left over from a previous recipe. The leek was also left over from another recipe. Amazing what you can make out of random bits and bobs lying about the fridge!
Ingredients:
- Leftover boiled potatoes
- Grated cheddar cheese
- 1 baby leek sliced
- 1 tbp butter
- Salt & Pepper
- Ready rolled puff pastry cut into rectangles
Method:
- Roughly mash potatoes
- Heat butter in pan.
- Add sliced leek and saute.
- Add potatoes and heat through.
- Turn heat off and add grated cheese. Mix well.
- Season with salt and pepper. Leave to cool.
- Cut the rolled puff pastry sheet into 8 rectangles.
- Put a generous amount of potato filling in the middle of one of the rectangles.
- Cover with another puff pastry rectangle.
- Seal the edges of the pastry with a fork.
- Repeat until all the filling has been used up (or you run out of pastry!)
- OPT: At this stage you can egg wash the pasties
- Put the pasties on a lined baking tray and bake in a 180C preheated oven for 30-40 mins.
- Leave to cool slightly before devouring.
