Looking for a recipe that uses Italian sausage/pre-diabetic recipes

Hello everyone I am looking for a recipe that uses Italian sausage where it gets tricky is my Roommate is pre-diabetic so I need recipes that are heavy on the produce and light on the pasta and rice. Thanks in advance!

While I am at it does anyone know any place to look up recipes for people that are pre-diabetic?

can't help with the sausage question, but what you might try as search terms for recipes are key words like: low GI or low glycemic (sp?) index. Or low GL (glycemic load).

This is my all-time favorite ‘no brainer’ recipe. It works with just about any vegetable and is a popular ‘what’s left in the crisper?’ end of the week recipe as well. Exception is lettuce, but carrots, celery, squash, etc, have all worked with success ( ... )

Really filling. I tend to add more veggies than it asks for. We use a pound of sausage and frequently double the veggies. I'm prediabetic as well and this doesn't mess up my sugar (as long as I am careful not to over-do on the pasta). The recipe calls for mixing the pasta with the sausage/veg and serving that way. By separating the pasta out, I can have more veggies without paying for it later.

Pre-diabetic & diabetic are pretty much the same thing, when it comes to what they should & shouldn't eat (I was diagnosed as pre-diabetic 2 years ago, & I'm STILL having a hard time adjusting. Carbs were my favourite food group :P)

I bet you could stuff the same stuffing in portabella mushrooms. Or green peppers-- just add the entire zucchini chopped. :) Fun with stuffing.

If you're looking to avoid carbs, have a look at Paleo cooking. Paleo avoids all grains and refined sugar. Some paleo does include dairy, and some doesn't. If you love cheese and butter, keep looking because there are paleo recipes with dairy. http://www.primalpalate.com/ is one of my favorites, but let Google be your guide, or hit your local library ( ... )
