In Russia we use curd cheese (tvorog), but you can use what's available where you live. Cottage cheese or other kind of fresh unsalted cheese which has similar texture. The recipe will work and taste really good.
oh, lovely! I didn't think about this. it really is absolutely doable to make tvorog at home not necessarily for pascha, it's very good on its own with creme fresh and honey or some jam/fruits Good luck and enjoy!:)
