Leftover Takeaway Noodles with Chicken & Veg Stirfry

Have you ever ordered a take away and didn't quite get what you want? A couple of weeks ago we ordered coconut rice (amongst other things) from our favourite Thai place and we got plain noodles instead. A bit of a bummer, but I didn't let the noodles go to waste. I made some chicken and veg stir fry and we had it with the noodles for our next the next day :)

I'm sure this has happened to lots of people and it got me thinking, what do you do when you get something you didn't ask for from the takeaway?

(I phoned the take away and got a free portion of coconut rice the next time we ordered)


Stir Fry Ingredients:
  • 1 tbp Ginger & Garlic Paste
  • 1/2 Carrot sliced
  • handful Mangetout
  • 6 Babycorn sliced & halved
  • handful Mushroom quartered
  • handful frozen Edamame beans/green soy beans
  • 1 boneless Chicken thigh fillet diced
  • 1 tub left over takeaway noodles
  • 1tsp Oil - any plain flavourless oil will do eg sunflower
  • 1/2 tsp Chili oil
  • 1 tsp oyster sauce
  • 1 tsp light soy
  • 1tsp water
  • dash sesame oil

Method:
  1. Heat oil and chili oil in a pan/wok.
  2. Add Ginger & Garlic paste.
  3. Add chicken and cook for 2 mins.
  4. Add all the veg and cook for a further 2 mins.
  5. Add the oyster sauce, light soy, sesame oil and mix well.
  6. If the mixture seems too dry, add water and mix.
  7. After 2 mins, the stir fry is ready.
  8. Warm the noodles and put it on the plate.
  9. Top the noodles with the stir fry.
  10. OPTIONAL: Scatter some coriander leaves and chili flakes over the top.
  11. Serve immediately!
