Feeding a Crowd

Hey, fellow LJers.

I help run a Convention, here in Texas. One of our logistical issues is that at the end of the long weekend, everyone is exhausted. Getting everything torn down and packed up when we have to get out of our hotel space within a deadline when everyone is exhausted makes it more difficult. To add onto that, this has to occur at dinnertime, after a weekend of hit-or-miss-meals adds even more difficulty.

So, having tired people leave to eat dinner, when we need every ounce of help to try and get things wrapped up, needs to be prevented.

The solution, at least in part, is to feed people. Normally not an issue, but I won't have access to a kitchen to cook, though I don't live far from the hotel.

The logistical issues I have to face:
1. No access to a kitchen/time to cook for 3-5 days prior to feeding.
2. No ability to re-warm things at the hotel, except crockpots/plug-in items. Most likely crockpots.
3. Limited deployment time.

All this boils down to, near as I can tell, is making food ahead of time, freezing it, then unthawing the bricks and reheating it crockpots earlier in the day. I have a large chest freezer to store them in, so space for freezerbags of food is not an issue.

So, any suggestions to recipes that will freeze well and can be prepared in bulk?
