chicken finger methods

Just curious how you all make your chicken fingers/nuggets. It seems everyone has a preferred method. I'm looking for a way to make then CRUNCHY without the breading falling off. I usually soak the chicken in buttermilk and Frank's for half an hour, coat in heavily seasoned flour and bread crumb mix, let it sit for 20 minutes, recoat in coating mix, and fry in a pot with about 4 inches of oil for 7 minutes. It's very tasty, but the breading sometimes slips off.
