A very attractive presentation of this dish. I wish I had an excuse to make something like this but I don't think I could eat the whole thing in a reasonable time. Does it freeze?

Thank you! Actually, if you get a small pineapple (1-1.5 kg), there is no problem to make just 2-3 servings. There will be some pineapple flesh left (I guess 200 - 300 g), but it seems manageable. What do you think?

I guess it does freeze, but the pineapple will loose its freshness in the freezer...

I suppose you could only freeze the rice portion and add the pineapple at the last minute. I'd have to leave out the coriander as well as I am one of those people who hate the taste of it. :(

yes, this sounds good. I'd also live the green part of spring onion out till last minute. you could consider replacing coriander with parsley.
