This looks fantastic. My aunt used to live in Morocco and brought back some amazing recipes and pottery. Turnips and pumpkin are some other great veggie choices for the couscous (Moroccans put pumpkin in everything!)

Wow, so you actually have the proper tagine dish? Do you use it in your cooking?

Thanks for the pumpkin idea - sounds really good to me!

Oh I wish i had the tagine! I don't live with my aunt any more - it was hers. She did cook in it though and the food was fabulous. I went to college in the Middle East and lived with her there. Sadly i'm back in the US now with no tagine! haha But i do have smaller clay pots that i brought back with me that i use to cook eggs (like this one http://farm3.static.flickr.com/2789/4224243801_d5e0961624_o.jpg)!

It sound like a good idea, actually I also have a clay pot (used in Russian cooking), which I might use for tagine. This one: http://www.pinchofcinnamon.com/2011/02/pumpkin-porridge-for-russian-winter.html
It is not very big though:)

you can make a makeshift tangine with foil. just make a dome and cover your pan with it. works well.

Wow, that's great! Thank you for sharing. Next time I'm definitely doing that.
