Camping food

Right-o. In less than 2 weeks I head off on my big oddeysey/sabbatical (OMG so excited!!). This will involve driving to Broome (Western Australia) from Perth on the inland route and coming back on the coastal route and exploring many places on the way. I plan to spend about a month. I will be on my own.

Now, organising food for a week away is easy. I just make a few freezable meals, put them in my esky and eat them as they thaw. For 4 weeks though this isn't so practical.

I have figured I'll probably do food this way on the way up to Broome (which should take a week or so, depending on road conditions - there is a lot of flooding going on right now - and depending on how long I get 'distratced' at places like Karijini). Once I get to Broome I will have to prepare some more food to take back down with me.

I will have access to basic camp kitchens along most of the way (I also have a camp stove and will be taking a saucepan and a frypan). I have a car fridge this trip too, so I can keep things colder for longer than if I had an esky - I can't freeze things in the car fridge though.

On the trip up buying food will be expensive and I will have limited options. Once I get to Broome I will have access to supermarkets (I have lived in Broome before, so I'm pretty familiar with the place). On the way down (which will take about 12 days - once again, I expected to get 'distracted' at Coral Bay) I will be passing through large towns every third day or so so I can get supplies.

Has anyone done this sort of camping before? Any suggestions about what my best options are foodwise? I can't believe I'm so organised in every other aspect but I haven't got anything to eat yet!
