Cooking vegetables to death?

I'm actually quite lucky.  My kid is less picky than the average 3 year old.  He'll eat any fruit, dairy, bean, most meats, some fish, and almost any grain (he's not a fan of quinoa, but loves everything else).  Note what's missing.

The only vegetables he will eat are corn, frozen peas (still frozen), potatoes and sweet potatoes in any form, tomato products (paste, sauce, soup, and bits in soup ok, but will not eat raw tomato) and carrots or green beans that are so soft as to be practically pureed.  Even then, he only likes carrots or green beans if they're in something else like soup.  Plain, buttered, cheesed, and/or salted have all been a no-go.  He's a bit more willing to try new things than an average 3 year old, but he's still not really a fan of trying something different.

ETA: Yes, I know that corn is a grain, peas are a legume, and tomatoes are a fruit.

He used to like butternut squash (and still likes it when it comes in the form of ravioli).

So we've been serving soup with vegetables with dinner almost every night.  My husband made a basic chicken broth-based rice soup with carrots and sweet potatoes, and tonight we're having minestrone.  But I'm getting tired of soup and would love new ideas.

Do you have any good recipes for soups/casseroles/other that combine really soft vegetables with other items?  He's allergic to eggs.  I can work around it for most recipes, but quiche, for example, would not be a good choice.
