Orange roasted chicken help

Yesterday I made a pantry staple- whole chicken, 'roasted' in the crock pot with potatoes, carrots, onion and celery 'til it's done. This time I'd wanted to do something a bit differently so I stuffed the cavity with a quarter of an onion and half of a whole orange (in large pieces) and squeezed another orange's juice out to use as the liquid ( Read more... )

You could try basting it with orange juice concentrate, like the canned stuff, but undiluted.

Zest the orange before you juice it. There is a TON of flavor in the zest.

orange flavor in mostly in the oil in the peel, try adding orange zest along with the juice.

When I put orange in my chicken, I cut one in half and squeeze one half out onto the chicken breast and back, and then kind of rub it around with the peel to make sure it's well coated. Then I squeeze about half the juice out of the second half inside the cavity, then put both squeezed halves into the cavity and stick it in the oven.

I've found that method to give a nice orange flavour without being bitter, and I enjoy it. If it's not enough for you, you could always add a second orange.

Ginger can really bring out the orange flavor. My mother does a really delicious orange ginger chicken and dumplings... mmm... I think I need to try and go home for the weekend now, haha.

I don't really know the exact measurements, but here we go...

Get enough chicken breasts for your appetite. Obviously you can use other chicken parts too, but breasts are easiest. Coat them in flour and give them a quick sear to seal in the juices. Don't worry too much about inner pinkness -- they'll be cooked some more later.

Chop up onions, carrots, daikon radish, and ginger into bite size pieces. You can dice the ginger smaller but I think it might actually provide more flavor in quarter-sized pieces.

Add ginger to a large pot with equal parts chicken broth and OJ. Simmer for a few minutes.

Follow the directions on a Bisquick box and toss in several handfuls of dough. Cook with the lid off for 15 minutes. Add chicken and veggies. Cook with the lid on for 10 or 15 minutes. This ensures that the dumplings cook on the top and bottom.

You might want to fish out the pieces of ginger before you serve -- if not, be aware that they're in there because they are strong :) Enjoy!
