Mom's Chocolate Pudding Cake
My family is putting together a family cook book, so I'm doing recipe testing.
Mom's Chocolate Pudding Cake
Ingredients
1 c cake flour
2/3 c sugar
1/4 c cocoa
2 t baking powder
pinch salt
1/2 c chopped pecans or walnuts (optional)

1/2 c nonfat milk
1 T oil
1 t vanilla

2/3 c brown sugar
1/4 c cocoa
1 c boiling water or coffee
Instructions
Mix together flour, sugar, cocoa, baking powder and salt.
With a fork, mix in milk, oil and vanilla.
Spread the batter in a buttered 8"x8" square baking pan.
Combine brown sugar and cocoa and sprinkle over batter.
Pour boiling water over the mixture.
Bake 30-40 min at 350.
The result is bits of cake floating in hot fudge sauce. Like Chili's Molten Chocolate Cake only messier. Serve in a bowl with vannila ice cream.
My parents grew up in southern Ohio. I shouldn't be surprized how many of the foods I grew up with turn up on "Southern Cooking" web sites. I just never think of Ohio as a "southern" state.
