my famous bacon & cheddar stuffed potatoes

These are always a hit!





YOU WILL NEED:
-4 medium baking potatoes (I use Russet)
-1/3 cup mayonnaise
-3/4 cup shredded cheddar cheese
-1/3 cup shredded cheddar cheese (seperate, for putting on top last)
-3/4 cup french onion dip
-1/2 cup real bacon bits
-4 green onions, chopped
-salt & pepper

-Scrub and pierce potatoes. Place them on a microwave safe plate; microwave on high for 20 minutes or until tender, turn once. Let stand for at least 5 minutes to cool.

-Meanwhile, in a small bowl, combine the mayonnaise, 3/4 cup cheese, french onion dip, bacon, and onion. Season with salt & pepper to taste.

-Once potatoes are cool enough to handle, cut off a thin slice off the tops of each potato and discard. Spoon out the pulp, leaving the shell (I leave a little pulp in there to keep the shell strong).

-Add potato pulp to the mixture and mash.

-Once it's combined completely, spoon mixture back into potato shells. Return potatoes to microwave safe plate; microwave again for 2 minutes or until it's heated through. Sprinkle potatoes with remaining shredded cheddar cheese.

-Eat, and enjoy!!



ps; you'll most likely have extra potato mixture left over- I always use it for a chip dip!
