Recipe: Carrots and Neeps

Serves: 4
1 lb. carrots, peeled and cut in chunks
1 medium or 2 small turnips, peeled and cut in chunks
2-4 Tbsp. butter
salt and pepper to taste
Bring a pot of salted water to the boil and add carrots and turnips. Reduce heat and simmer until very soft, 20-30 minutes. Drain well.
Mash by hand with a potato masher, adding butter, salt, and pepper to taste. Mixture should still have some texture to it, rather than being completely smooth.
