Recipe: Brown Rice

Serves: 4 (makes about 2-1/2 c.)
1 c. brown rice
2-1/8 c. water
1/2 to 1 tsp. salt
If time permits, soak the rice first for an hour or longer in water to cover. Rinse the rice and drain. Bring 2-1/8 c. water to boil in a saucepan and add the salt and drained rice. Return to a boil, lower the heat to low, cover tightly and cook without disturbing the lid for 40-50 minutes.
Check to see that rice is fully cooked and that there is no remaining liquid; re-cover and let stand for 5-10 minutes before fluffing and serving.
Notes:
This technique, with the soaking, seems to work well.
