Chicken pieces
2T cold water
2T cornstarch
1c sugar
1c soy sauce
1/2c vinegar
1 clove garlic minced
1 can pineapple chunks
3t grated ginger root
1/2t cracked pepper
Cook sauce ingredients until thickened, add 1c pineapple juice, stir sauce constantly so it won't stick.
Place chicken, skin up, in roasting pan, pour some sauce over, bake uncovered 350° about 1.5hour or until tender. Baste with reserved sauce every 20 minutes. add pineapple chunks last 30 minutes.
*ED NOTE: I've had this glaze used on chicken wings before and it was delicious. Not sure on the cook time for those, though.
