Mexican-style Chicken Kiev

8 chicken breast halves
1 7oz can dried green chilies
4oz jack cheese, cut in 8 strips
1/2c dry bread crumbs
1/4c grated parmesan
1T chili powder
1/2t salt
1/4t cumin
1/4t pepper
butter, melted

Pound chicken pieces to about 1/4". put 1-2T chilies & 1 cheese strip in center. Roll up, tuck ends under. Mix crumbs, parmesan, chili powder, salt, cumin and pepper. dip each breast into shallow bowl of 6T melted butter and roll in crumbs. Place, seam side down in oblong baking dish & drizzle w/ little melted butter. Cover & chill overnight! Bake uncovered at 400° about 20-25mins or until done. Serve with tomato sauce:

1 15oz can tom sauce
1/2t cumin
1/3c sliced green onions
S&P
hot pepper sauce

mix & heat well, cooking onions a little.
