Surprise Meringue Cookies
Makes about 3doz
3 egg whites at room temp
1.5 t Vanilla
pinch of salt
3/4 c sugar
1.5 cup (or less) mini chips
1.5 cup fine chopped pecans
Preheat oven 300°. beat whites until they hold shape, add vanilla and salt. beat while gradually adding sugar until mix is thick and glossy. fold in chips and nuts. drop by spoons onto foil lined baking sheets. bake for 30 minutes. Turn off oven and leave to dry out several hours or overnite. Store in tight-fitting tin.
