Mini "Xmas Puddings"

As the city was counting down last night, I decided to spend the night home to relax. Inspiration struck and I decided to make mini Xmas puddings out of my usual "No bake cookies" aka "Preacher Cookies" recipe.



Mini Xmas Puddings

For the "puddings"

½ cup butter

4 tablespoons unsweetened cocoa

2 cups sugar

½ cup skim milk

1/8 teaspoon salt

3 cups quick cooking oatmeal

1 teaspoon vanilla extract

1/2 chopped mixed fruits, soaked in bourbon

For the ganache

100g white chocolate

100ml cream

For decoration

1/2 cup Sugar leaves

1/2 cup chopped cherries

Mix the skim milk, sugar, vanilla, salt and butter in a pan and bring to boil. Leave it at a rolling boil for 3 mins and remove from heat.

Add oatmeal, cocoa powder, mixed fruits into the boiled milk and mix thoroughly. Stir in a shot o bourbon and then leave to cool.

While the mixture is cooling, double boil the white chocolate till soft and mix in the cream to make the ganache. Give the ganache mixture a good whisk and keep warm.

Roll the cooled "pudding" mixture into small balls about one inch in diameter (or to preferred size).

Dip the "pudding" balls into the ganache and let cool in a fridge.

Decorate with sugar leaves and chopped cherries to resemble a mistletoe.

Spoon some ganache and drip a little over the assembled mistletoe to allow them to set in place.

Took me about 10 mins to whip up the "puddings" and the better part of 2 hours to cool down everything and assemble. Next time, I need to remember to get a nice flat plate and to use spoons while removing them into containers. But overall, I'm pretty satisfied how it came out. :)
