Garlic Bacon

Carla had the most wonderful idea this morning:
Garlic Bacon

We added two minced cloves to about 8 oz. of bacon about halfway through cooking so as to not burn the garlic, but nicely toast it.

It was good. Really, really good. Next time we cook it I think I'll let the raw bacon sit with the garlic while I prepare the rest of the breakfast, then remove the garlic again until the bacon is halfway done. That should help the fat to absorb more garlic flavor, but keep the garlic from going black and charred (if added in the beginning with the bacon).
