Tomorrow, Paradigm is having a potluck lunch before our rehearsal. I signed up to bring desserts (as I usually do). I am making
shortbread tarts with cream filling and fruit on top, which I have made for this group before (I'm making lots more this time, though, because they were very popular last time and because I plan to give some away in other contexts tomorrow, too) and white chocolate brownies.
The white chocolate brownies are really, really excellent and they are so easy to make. Here's the recipe (since I got it from a book and not the internet):
Ingredients (to make one pan of brownies--I doubled this and made two pans):
1 stick unsalted butter, plus extra for greasing
8 squares white chocolate
3/4 cup walnut pieces
2 eggs
generous 1/2 cup soft brown sugar
generous 2/3 cup self-rising flour
Preheat the oven to 350 degrees F. Lightly grease a 7-inch square cake pan. Coarsely chop 6 squares of white chocolate and all the walnuts. Put the remaining 2 squares of white chocolate and the butter in a heatproof bowl set over a pan of gently simmering water [or, as I did, just melt it together in a saucepan and keep a close eye on it]. When melted, stir together, then set aside to cool slightly. Whisk the eggs and sugar together, then beat in the cooled chocolate mixture until well mixed. Fold in the flour, chopped chocolate, and walnuts. Turn the mixture into the prepared pan and smooth the surface. Transfer the pan to the preheated oven and bake for 30 minutes, or until just set. The mixture should still be a little soft in the center. Remove from the oven and let cool in the pan, then cut into 9 squares before serving.
