I threw this together -- I had just intended it to be the lentil version of the spicy black-eyed peas and greens, but I started throwing in more stuff, since I'd put too much water in the pot (rather than dump the water out, my theory was to just make more food). It was a good way to get rid of leftover veg.
Baby chard and shallot salad with olive oil, balsamic vinegar, salt, and pepper.
Lentils, quinoa, onion, carrot, jalapeño, greens, leeks, tomato paste (aka tomato puree), garlic, lemon juice, cumin, olive oil, salt, soy sauce.
Not bad, but next time I am adding more spices and salt.
