Lessons from my adventure on Monday:

1. Always weigh the ingredients.
After my unsuccessful bake two days earlier, I took a fellow baker's advice to watch my egg-white content.
So off we went to Phoon Huat to buy a digital scale, from which I was able to acquire 88g of egg-white exactly.
It worked like magic.
