potstickers, movie & seeing one of my best friends more often!

Today, I made vegetarian potstickers w/ carrots, bamboo, scallions, water chestnuts and napa cabbage. It's literally been YEARS since I've last made any so my pleating skills were quite sad at first, but as I progressed, it got better! I also got a new frying pan and that helped with with not having them "stick" to the "pot". I QC'd 4 and they were crispy and really tasty!

I'm going to serve these as an appetizer for my Saturday lunch--dont you wish you were my friend!? lol. This is my menu:

Appetizers:
-edamame
-veggie pot stickers

Main Entree:
-chicken and broccoli stir fry w/ Chinese egg noodles

Dessert:
-five star spice chocolate muffins with ginger cream cheese frosting

It took me a while to chop everything up and then make 44 potstickers, but I rented Forgetting Sarah Marshall so I was watching that while I was preparing everything. On my way out, the lady at Blockbuster asked if I was going to watch with any kids...uhh, no, I dont have any kids and know there are a few weiner shots...lol.

Last night, one of my best friends from college, Kim, called me to tell me that she's going to be coming to Texas! I think she's in semi-conductor sales and acquired Texas as one of her territories so she's going to be flying to Dallas every 2 weeks or so for a while so we'll definitely be meeting up! I'm super excited since I havent seen her very much since college, but we still keep in touch. She thinks it'll be pretty soon so she could be here as early as a couple of weeks! YAY!

Anyway, not much is going on. Steve's mom called me today and we discussed Thanksgiving. I offered to host it this year since I know I can roast a turkey without drying it out (yay) and it'll give her a break from making such a big meal. Usually, Steve's aunt & uncle from LA drive to their house and help with the cooking, but this year, they're going to Michigan. Chad, Steve's cousin and the aunt's grandson, joined the Navy, got married and has a baby girl (which totally shocks me...I still remember him as a kid) so aunt & uncle will be cooking their first Thanksgiving with them. Misti misti_k, you're more than welcome to come over and anyone else who has no place else to go for Thanksgiving!

I'm going to hit the sack early tonight since I got went to bed later than expected. I can definitely tell the difference between a 7 hour night and a 9 hour night.

Less than 2 weeks until Steve is back home! Hearing from him twice in 3 weeks seems like foreverrrrrrrrrr.
