And on this day of course I have to talk food. I got up early. Then hit the snooze button so I could get the bird in the oven. We are trying some variations on
Alex's roasting with cheese cloth,
Tylers sage butter for under the skin, I created a stuffing recipe with Apples and Bacon.
My mother is bringing her mandated side dish the
Pecan Sweet Potatos along with
Carrots in Vermouth. My grandma is bring a corn salad,
Hawaiian Rolls and the always easy and yummy
Country Crock mashed potatoes in a tub.
Last night the kiddo and I made
our pumpkin pies. But somehow the 2 deep dish shells were not enough so I
found this recipe for the Combination butter and shortening crust and we made one more pie crust to put the last of the filling into. When the turkey is done in the oven I am going to put
this cake in the oven.
By the sound of this feast you wold think we had a lot more people comnig over. The cousin who usually comes over has to work today. My good friend and her little girl have an obligation to go to her mothers. My uncle and family aren't able ot make it. He has had some health issues so I hope he is well enough to enjoy the day. And beyond that well... Those are the only folks we invited.
Now for the recipe. I put some into our
stuffing cage into the bird. The rest is in a 2qt casserole dish waiting to be baked. Good thing I have a lower oven (you know that drawer at the bottom, mine actually cooks food). I plan to bake the rest at 350 for about 25-30 minutes. Just so the edges are crispy.
Apple Bacon Stuffing
3 small granny smith apples - peeled cored and cut into 1/4-1/2" cubes
1 med-lrg white onion chopped (similar sizes for even cooking time)
2 cloves garlic minced
1/2 bag of mini baby peeled carrots chopped
1 smal bunch of celery chopped
3/4 pkg bacon cut into cubes
1 store bought pkg of stuffing bread (sliced/cubed/dried bread)
2 cans Swanson Chicken broth
Sage/Salt/Pepper to taste
Pre-heat oven to 350 deg.
In a LARGE skillet put in bacon then turn to med high heat. when fatty bits turn translucent put in your chopped onion and minced garlic. Stir to coat with bacon renderings. When onion begins to look translucent put in the carrots, celery and apple. Add minced fresh sage (3 large leaves) and salt & pepper over the mixture. stir periodically. Add 1 can of chicken broth.
in the 2 qt baking dish fill about half full with bread cubes and with a large spoon add mixture from skillet onto the bread crumbs and coat all bread. put lid over mixture to soften all of the bread with the steam.
This is when I put this part into the stuffing cage/you can choose to put it in the bird directly.
The remaining bread crumbs put inot the skillet add the remaining chicken broth stir to coat all bread cover and simmer to let steam moisten all bread. Put into a 2 qt baking dish and bake in pre heated oven for 25-40 min.
Or if you prefer not to fill the bird you would need 2 baking 2 qt dishes or a large 9x13 size baking dish to bake your dressing.
