So, I made something yummy last night. And we liked it so much we took the leftover stuff and made it again tonight.
I don't know what the hell to call it. They're like little meat pies, but...not. Kinda Cajuny.
You'll need:
*oil (I used sunflower because it was there and I like the way it smells)
*garlic (minced)
*black pepper
*red pepper
*chili powder
*lemon juice (I squeezed from fresh, OH WHAT NOW)
*cayenne pepper (dried, ground, you know the drill)
*cumin
*salt
*one onion, diced
*1lb ground turkey
*2 sweet Italian sausages (or spicy, whatever.), chopped up...I basically just peeled off the casing bit and squished the meaty part into the skillet and chopped it in with the turkey
*1 can red kidney beans, drained and rinsed
*Pie dough (I ended up using 2 and a half boxes of the Pillsbury ready-made pie dough that's all rolled up in the long skinny boxes for both last night and tonight's dinner)
*pico de gallo--you can be hardcore and make this yourself, or you can be lazy and buy premade like I did. What? It was in the produce aisle at Harris Teeter.
*sweet corn--we used the steam-in-bag kind because we're lazy fuckers around here.
Start off with a good drizzle of oil in your skillet on medium heat. Add like a big spoonful of garlic, and ground black pepper, enough to give it a healthy kick. Cook it till that garlic's sizzling. Mmmmm. God, that smells awesome. Add your ground turkey, diced onions, and your sausages. Cook for a while. Add generous amounts of whatever the hell spices are up there to taste. If you can't handle the heat, obviously, don't molest your cayenne pepper. Let all the meat finish cooking, and then add your kidney beans, about 3/4 a cup of water, and the juice of one half of a lemon. Stir. Add more seasoning if you think you need it. Let this shit cook down a bit, and then mash the beans a bit to bind it all together. Once it's no longer "soupy", stick it in the fridge to cool.
Get your pie dough stuff. Roll it out. You can use a rolling pin to make it a little thinner so the dough goes a little further and will cook faster. Use something circular to cut out little circles, roughly 3-4 inches in diameter. I used the bottom of a cereal bowl. Put a spoonful of the filling in the center of the dough, and fold it over, pinch the edges, yadayadayada, surely y'all know how to make a little turnover-type thing.
Assemble your little army of turnovers on a baking sheet. You can brush them with an egg wash to make them turn that really pretty shade of golden, if you wish. I did, except the brush was MIA so I kinda oozed egg onto them with a fork. Whatevs.
You will possibly have 2 or more pans of these if you use all the filling. I think it made roughly 30-40. They're kinda fun-sized.
Bake them at around 350 till they're appropriately brown. Garnish them with your pico de gallo and corn, because that particular sweet-tangy-salty-spicy combo was fucking delicious.
