Well I can't help with you freaking out, but I can help with Lewis and Clark.

Go to commonapp.org and create an account, it'll make your life 100,000 times easier. The common app is really easy to fill out and you've already written your essay for UO, just take out the whole "UO will be a bridge" thing and you can submit it as your essay. Now the LC supplement is really easy too. It's just a bunch of short answers and that's it. Go to collegeboard.com and send your scores to Lewis and Clark (it'll cost a bit of money but I don't think it's too bad). Now the trickey part is going to be transcripts and teacher recs. You need both of those to be send and postmarked before February 1st. Actually I'm not sure about that February first deadline, so you might want to double check it. That's what it's listed as on Common app, but I feel like it was more like January 12th or something.

Anyway, L&C LOVES anything international. So the fact that you went on exchange, even if you don't have the best SAT scores or GPA, gives you a huge boost. If you can get those transcripts and teacher recs then do it, I think you have a pretty good chance of getting in. Besides, it's free if you do it all online, so what do you have to lose?
