Whole Wheat Flat Breads

Tonight we had a vegetarian dinner so I made roasted winter squash soup, homemade hummus, and whole wheat flat bread. The hummus was definitely one of my better efforts - a little tahini (I don't like much), plenty of good olive oil, and I parboiled the garlic cloves to take the edge off.

I have posted the flat bread recipe here since it was just about the easiest bread recipe I've ever tried and I've already been requested to make it again soon. I mean Chicklet basically made it other than the cooking (she isn't allowed yet) with only a little help from me. It's that easy. I also used a bit of oil in the pan as I cooked them just to make them a crispier.

Whole Wheat Flat Breads

2 c whole wheat flour
1 tsp salt
1/2 tsp baking powder
3/4 c warm water
3 tbsp extra virgin olive oil

In a medium bowl mix together flour, salt, and baking powder. Add in water and olive oil and knead to form a soft dough. Cover with a towel and let rest for 30 minutes.

Heat a large skillet on medium. Divide dough into 8 equal pieces. On a lightly floured board roll out each ball of dough into a thin, even oval. Cook two flat breads at a time in the skillet until brown on the bottom, about 2 minutes. Flip and cook until brown on the other side, 2 minutes more.
