Candied Lemon Peels

The house smells all lemony right now. Mmmmm! Today I made candied lemon peels to give as gifts to my in-laws. They are not difficult to make, just very time consuming and hard on the hands. The trick is to shave off the peel with a paring knife but not get any of the pith. If you get pith, you have to scrape it off since it's bitter. Then boil the peels in water three times, draining and changing to cold water at each boil. Followed by a boil in sugar water (half sugar/half water) until translucent and then a toss in a granulated sugar. I will note that it takes much longer to peel enough lemons to make a proper gift than it does to boil it four times. But they are very tasty and cheap to make!

Next up are chocolate dipped pretzels, maybe even peanut butter chocolate dipped pretzels if I can get the double coating to work.
