A few years back, when I left the restaurant because the hours that I was working compared to the pay and tedium were over the top, I decided that I'd try to find an apprenticeship with a chocolatier on my Friday's off.
That plan stalled when we got hired to go to trial three weeks before the darned thing was scheduled to start and in Oakland to boot. That case was delayed for 3 months, but the plan never came to fruition. Next thing I knew I had a second job and a year and a half later it had not even slowed down. I just got hired to do 3 hours of bankruptcy intakes for an attorney in my office. I have more work than I can shake a stick at, but after Delta made some decisions to take care of myself.
I'm eating better, swimming 3 days a week, and am seriously considering taking a free yoga class. This weekend I was bipping around cyberspace and found this little gem.
http://www.ecolechocolat.com/index.php It's a Chocolatier's School in Vancouver BC, Canada. They have a three month online program and a 5 day hands on that can be done at a later date. I have 2 trials set for January, so that class is out, but I am seriously considering taking the April class. Now all I have to do is contact some of my old instructors to see if this is on the up-and-up.
