Hello, everyone! I made a really good lentil soup the other day and thought I'd share with you all, since it was disgustingly easy and cheap.
1.5 medium onions
2 medium carrots
3 stalks celery
3 cloves garlic
3 cups dried lentils
approx. 6 cups vegan broth (I use Vegan Better than Bouillon. It's the best one I've had, by far)
3 tbsp vegan butter/olive oil
2 bay leaves
Thyme & sage (not sure how much exactly. I just kinda throw it in)
Salt & pepper to taste
A BIG stock pot
Saute all the veggies in your stock pot until soft (I usually cover them with a lid to speed it up). Add the garlic last so it doesn't burn. Add the lentils, broth and herbs. Cover. Let simmer for an hour at least, so the lentils can soak everything up. If it gets too dry, add a bit more water/broth. If you don't have time to let it simmer until it all breaks down, you can blend it all together to have a bit of a smoother consistancy, but I'm low matinence so I just eat it as-is. Serve with a good vegan bread or a home-made one.
This makes a lot of soup, so I like to make it & keep leftovers in my fridge or put it into smaller portions & freeze it.
