Hello all.
Lately, I have gotten into a terrible food rut and most of my meals revolve around pasta/couscous. I am ultra poor right now and I work constantly so it's hard to have a nice sit-down veg meal.
Are there any quick/cheap meals you make through out the week? What do you have for lunch? (I am trying to think of new things to take to work).
I am mostly looking for things I can make in bulk and then freeze/keep around for a while. I often gt home late from work and pasta has become the "quick fix" for actually making a whole meal (and a mess) just for me. I made wild rice burgers back in March and froze them. It was awesome. Now I am looking for some healthy balanced meals on a budget that don't always include pasta.
Also, does seitan freeze well? I have been craving bbq chicken lately (but you know, not actual chicken) and I wanted to make some seitan but I don't think I'll be able to eat it all. If you have any tips regarding storage/freezing techniques, please let me know.
Does this make sense? Any help/advice/recipes would be great!
