It has been a long time since I made a food post. Here are a few of the things I have cooked up in my kitchen over the last few months:



Lentil-Quinoa Stew
A very satisfying but simple stew recipe from a recipe that Jimmie gave me.



Roasted Veggie Enchiladas with Tomatillo Sauce
The roasted veggies inside the enchiladas are red bell peppers, red onions, and squash.



Meza: Muhammara (a walnut and roasted red pepper purée), Chickpea Croquettes, Cilantro-Yogurt Dip, & Toasted Whole Wheat Pitas.
I was inspired to make meza after my birthday because of the great selection of Marouch's big meza.



Clayudas & Tomatillo Gazpacho
Clayuda= toasted tortilla with garlicky black beans and cole slaw
Gazpacho = puréed tomatillos, jalapeños, green bell pepper, veggie broth, avocado, and cucumber; topped with feta cheese & avocado. Oaxacan recipes. Oaxacan food is pretty damn good and there are a few places to get such yumminess within blocks of my place.



Mango Teriyaki Tofu served over brown rice. The mango purée has mango, ginger, & rice wine in it.



Baked Peruvian Quinoa & Cheese
A spectacular dish - really really tasty and not bad for you though just as comforting as mac & cheese.



Baked Tofu with Okra & Barley in Peanut Sauce
wow, this one looks just awful even though it was very tasty. I'm a southern girl so okra is always welcome on my plate. The tofu was baked in the oven with the peanut butter-tomato-okra-onion sauce and served over barley.



Drunken Beans
We made these with beer leftovers from a beer tasting party that we hosted - they are pinto beans stewed in onions & beer.



Soba Noodles with Chard, Raisins, Tomatoes, & Pine Nuts



Bulgar with Chard & Hazelnuts with balsamic syrup.



Barley-Soyrizo Skillet Pie with leftover macaroni salad from a restaurant.



Red Lentil & Basmati Rice Croquettes with Romaine-Mango Salad & Cucumber Raita on a toasted pita. Another veggie patty adventure (the 4th in a series).
