What's a good way to thank your friends for doing something special for you? Even though it... wasn't really a big deal, it just meant a lot, but... anyway.

For starters, saying something like that? Always good.

Secondly, if you intend to offer anything, try to make it something unique to you. Good at painting? Ask them if they'd like one. Good cook? Whip 'em up a nice lunch (or brunch, I've always found those to be more friendly in atmosphere). That sort of thing.

If I could paint... but cooking seems to be a popular suggestion and I'm "okay" at it, so I guess that would be all right-- any brunch suggestions?

It doesn't have to be eloquent. The less planned, the more genuine. In my opinion, that's the best "thank you," you can receive.

Brunch food tends to be a little easier to cope with. Scones can be a bit of an ordeal, but they're really delicious. If you can pull off omelets, they're relatively easy, not too fancy, and are familiar. Just make what you're comfortable with.

Scones are a little out of my league, and beyond what's in my pantry. Omelets might be doable, though.
