I always loved my mother's potato salad. Growing up, her potato salad was the measuring stick I used to judge all other potato salads, and alas! They all came up short. Fortunately for me, when I moved out and really began to cook on my own, my mother sent me a list of my favorite receipes, her potato salad being one of them!
Mwhahaha!
This was extremely fortunate, since she past away not even two years later, her secret for fabulous potato salad may have been lost forever.
Unfortunately, it's taken me awhile to get the nack of it. The receipe was not from any book so I had absolutely no sense of measurements (ie, boil some potatoes and some eggs, etc). However, now I think I've gotten the hang of it, because yesterday, I made the best potato salad in the universe!
It's completely addictive and I find I can't stop until I've eaten almost the whole thing, despite the fact that I made a VERY LARGE BOWL of it. I've mentioned the potato salad at work, and my coworkers want to try it (they're skeptical about my claim that it's the best use of potatoes EVER). However, I don't think the salad will last until Monday.
And with my husband gone, it's all mine! MINE!!
I'm gonna go back to eating now.
