Romanian Recipe: Ciorba

Amazingly hearty vegetable soup has no fat in it whatsoever. It is my grandmother's most well-loved dish, and her great-grandmother taught her how to make it. Also good served hot or cold.

Ingredients
1 potato
1 bunch of green onions
1 celery root
1 yellow squash
2 large handfuls of spinach
1 bunch of collard greens
1 spoonful of rice
2 brussells sprouts
1 lemon (juice)
Dill
Water

Method

-Clean and cut the vegetables and put them in a large pot.
-Pour water over the vegetables, about ¾ of the pot’s volume.
-Cooke over medium heat, covered.
-Add rice when the water boils.
-Add salt to taste.
-Add the lemon juice before serving.
