This is the ultimate comfort dish. I recommend not stirring it too thoroughly when it's cooking; the carrots and potatoes stay chunky!
Ingredients
4 large potatoes
2 large carrots
1 large onion
3 spoonfuls of vegetable oil
Salt and pepper to taste
Method
-Chop the onion, and spread the pieces out on the bottom of a pot.
-Peel and quarter the potatoes, and place a portion of them on top of the onions.
-Peel and chop the carrots, and place a layer of those over the layer of potato pieces.
-Continue to alternate layers of potatoes and carrots.
-Add the oil on top.
-Add salt and pepper to taste.
-Cover the pot.
-Cook it over a low flame, stirring occasionally.
It’ll be done in about an hour.
