Snow Candy
1 lb white bark candy
1 lb salted nuts
2 cups crispy rice cereal
1. Melt candy in a double boiler.
2. Add nuts and cereal.
3. Mix well. Spoon onto waxed paper.
4. Refrigerate until firm.
5. Break into pieces, store in air tight container.
For a change use 2 cups of coconut in place of cereal & nuts.
Haystacks
1 12oz package of buttersctch morsels
2 tablespoons peanutbutter
2 cups nuts
1 package of chow mein noodles
1. Melt morsels and peanutbutter in microwave.
2. Mix nuts and noodles in a large bowl
3. Pour morsel/peanutbutter mixture over nuts and noodles
4. Stir until nuts and noodles are coated
5. Spoon onto a cookie sheet
6. Place in refrigerator until set.
Candied Citrus Peel
zest of 4 large lemons
3 oranges, or 2 grapefruit peels
1 cup sugar
1/3 cup water
1. First simmer zest in 1 quart water for 6 min.
2. Drain, rinse with cold water, and set aside.
3. Bring sugar and water to simmer.
4. When sugar dissolves, cover pan and boil a few minutes until last drops of syrup fall from the end of a metal spoon to form a thread.
5. Remove from heat, stir in peel, and steep 1 hr.
6. Serve or store covered in refrigerator.
Bourbon Balls
2 cups vanilla wafer crumbs
2 cups pecans
2 cups sifted powdered sugar
1/4 cups cocoa
3 tablespoon light corn syrup
1/3 cup bourbon
powdered sugar sifted
1. Mix wafer crumbs, pecans, cups of powdered sugar and cocoa
2. Combine corn syrup and bourbon, stir into crumb mixture
3. Shape into 1 inch balls
4. Roll balls in powdered sugar
