So the bubbling is almost over - about time to pull the baby beer out of primary. I'm still undecided if/how I want to put it on secondary. At the very least, I could keg it and let the keg sit. Timing is an issue as we may or may not try for a 'We've Been Homeowners For One Year!' party, which means I either need to hold off tapping this beer, or ( Read more... )

Since you're thinking about a single barrel, you can probably rely on any additional conditioning to occur in the keg. Your biggest issue is probably the clarity of the beer, and depending on the style and your preferences, it may not be worth the time and extra carboy to let it sit longer.

It's just an American Pale, so I don't think it needs a huge amount of time in secondary.

As for clarity, I've got a pack of Super Kleer I'm hoping to try. I figure I'll pitch that in when I rack to the corny and let it sit for a few days in secondary before I force carbonate. Before I really put on the gas, I'll draw off the sludge so it won't get shaken back into the beer when I shake the thing around.
