Could it be that I'm approaching stability? In the evenings, I'm no longer so full that I feel like I'm going to die. While my knees are a little wobbly, I haven't actually had them completely give out on me in two days. After going berserk a couple of days ago, I'm able to do things around the house without my brain freaking out to the point where I have to put on headphones to drown it out. My weight is slowly going down after being out of control. So, I'm cautiously optimistic that I've found the right macro nutrient combination.
If this ends up working out, it means that I _can_ handle studying a little bit of Russian every day. That would be a huge relief. Right now, I'm being really cautious in how much studying I do to avoid having my head explode. I'll keep everything at this level for a while and will then add in Russian movies after we finish watching Cowboy Bebop.
I've also decided that it is time to try tofu (again, as I have eaten it previously). I eat peas and lentils (although lentils may cause issues), so maybe one more legume would be okay. While I'm not in love with tofu, it is perfectly okay and would give me one more option as far as what I could eat. Also, since it has a nice balance of protein, fat, and carbs, it would definitely make it easier to find food when traveling or otherwise fill in some missing nutrients. The biggest problem with tofu is that you need to change the water it sits in every day, which is kind of a pain in the ass. So, we'll see.

- Monday: Chicken on broccoli with apples, brussels sprouts, cauliflower, and almonds
- Tuesday: Chicken on mushrooms with apples, cauliflower, garlic, ginger root, coconut milk, and tofu
- Wednesday: Pork and salami on celery with onions, cabbage, cucumber, cauliflower, basil, and capers
- Thursday: Salmon on arugula with apples, cucumber, cauliflower, seaweed, dill weed, and tofu
- Friday: Beef on zucchini with apples, onions, broccoli, mushrooms, oregano, and tofu
- Saturday: Chicken on spinach with onions, mushrooms, zucchini, basil, and parmesan
- Sunday: Pork on zucchini with cherries, cauliflower, almonds, and rosemary
