Here's a chicken recipe that is a favorite of mine. Pretty easy to make and tasty too.
Chicken Parisienne
Place in baking dish:
4-6 large chicken breasts*
Combine:
1 can Cream of Mushroom soup
1 small can mushrooms w/liquid
1 C sour cream
1/2 C sherry
Pour over chicken, sprinkle with paprika and bake at 350 farenheit for 1 1/4 hours.
Serve over rice.
*I usually use whatever chicken I have on hand, bone it out and use bite sized chunks rather than doing the whole bone-in breast.

i usually use only boneless chicken breasts because they're our faves.

Take a skinless, boneless chicken breast.
Pound flat with a meat hammer.
Sprinkle with chicken fajita seasoning
Heat a small amount of olive oil in a skillet, cast iron preferred.
Fry in the oil until the chicken is done and slightly crispy.
Cut into strips and serve over a green salad of your choice.
